Marshmallow Frosting Dipped, Hi Hat Cupcakes!

Later this evening we are going out to dinner with our good friends Rob and Candace. The routine, almost weekly, has become dinner then back to one of our houses (usually theirs unless ours is clean) for dessert, games, movies, etc.

Since I started my cake class I haven’t really been able to share any of the fruits of my labor with friends. My cake class is on Tuesday nights so every Wednesday I walk into work with a pretty little cake for the ladies in my office, but because it is in the middle of the week, I am not sure it would really last until the weekend, so I haven’t been able to share… which Candace kindly pointed out 🙂

So last night I decided that I would make a cake today… I could always use more practice right!? So I started mulling over cakes to make and different ways to decorate and I somehow came across these cupcakes! I was SO excited about them that I had to make them!
While I didn’t necessarily bake a cake and decorate it, I did use quite a few of my cake class accessories… those piping bags really do come in handy!

So here they are….

The original recipe came from Martha Stewart (of course!) She made the cupcakes from scratch, I however opted for the boxed cupcakes! I was really more excited about decorating and eating. You can use any recipe that you’d like for the cupcakes; bake them as directed and let them cool.

Here is the recipe for the meringue frosting and chocolate coating.  I used a superfine baking sugar as I had read that the frosting can turn out a little grainy… I noticed no graininess as I was “testing” it! 😉
  
I actually microwaved the chocolate and oil and it worked fine! The whole double broiler thing is much messier.
 

Mine aren’t quite as perfect as Martha’s but for the first time I think they look great! When dipping them into the chocolate the meringue seems to squish down a little so I will have to see if I can find a solution to that 🙂 Candace will have to leave a comment and let us know how they tasted… I can’t wait to eat these things!

    How cute! I’m so jealous that you can make such adorable things. I’d love to get into cooking and baking, but I’m planning on waiting to test my “skills” until I live alone and won’t be so embarrassed when the smoke detector goes off of the food looks like roadkill :p

    Looks delicious! It reminds me of how they dip their ice cream in chocolate at Dairy Queen. Now you’re going to give me chocolate cravings! 🙂

    Thanks girls! I know, they reminded me of dairy queen also- and they were SO good… but I could only eat 1/2 of one, they were SO sweet! Definitely worth a try if you want to make something new 🙂

    Ok, those look super yummy…definitely like a dq cone:-) I love the meringue frosting…I haven’t made that one in a while. Might need to go do some baking;-)
