As you may remember reading, I kind of blew the whole “celebrate-your-husbands-Masters-degree” thing by not really thinking enough ahead. We were tired and just ended up driving home, hubby didn’t even get to see some of his family. Sad… I know. We had planned on going to BJ’s for pizookies for dessert- so when we decided to have everyone over to our house on Sunday to celebrate I knew exactly what to bake!
Now, you might be thinking- “she is telling us how to make a cookie with ice cream?”, and the answer is yes. Why? Because I Googled it and went to Pinterest looking for ways to make them- it just didn’t seem this easy. And honestly I was right. I didn’t find anything this easy.
I found homemade cookies in large pie tins, or homemade cookies in a special order 6 inch pizookie plates, or any sort of cookie dough in cast iron pan… with most of those you either had to leave a little uncooked in the middle (which-yum
to me but hubby likes his cookies baked through) or if you thoroughly
cooked it you were almost guaranteed to burn the edges. And you had to cut them smaller or you ended up sitting around one plate with your whole family, which would be fun for just the four of us, but not for 15 of us. Then I remembered that one of my favorite cookie recipes actually bakes in mini-muffin tins, so why could I bake these in a similar way. Personal Pizookies it is!
So, it is this easy- I promise.
You can use whatever cookie dough you’d like. I was running way behind so I picked up the big tub of premade Nestle Chocolate chip dough.
Spoon cookie dough into your muffin tin, about 1/3 of the way full. Smash it down just a touch to fill in the cup.
Bake them until they are golden around the edges, mine took about 20 minutes at 350, but yours will vary depending on the cookie dough and your oven. Just keep an eye on them. My second batch got a little too done, but the ice cream softened everything right up!
Now- pay close attention 😉
Take the cookie and put it on a plate while it’s still warm.
Top with a generous portion of ice cream. We had both Vanilla Bean and Baskin Robbins Peanut Butter and Chocolate since it’s hubby’s favorite kind.
We set out toppings- chocolate fudge, syrup, caramel, whipped topping, etc. Pick your favorites.
Eat! That it- it’s the perfect size personal pizookie and it’s fantastic! Super easy and super yummy- now go and try it and let me know how it goes!

I love using cupcake tins for things other than cupcakes! Pizookies are a favorite dessert around here, and I forget that some people still haven’t tried them! For Rob’s birthday we did the family-sized one in a pie tin, and I like that because more of the goo remains 🙂 But I know for Ben, you need it cooked!
Easy enough! I’ll be sure to give it a try sometime soon.
