Today I wanted to share a simple and refreshing (and easy!) salad. My sister-in-law first introduced this to us on vacation and again at a birthday party. So when we were trying to come up with our menu for our mint-themed party, this immediately came to mind.

Ingredients:
Watermelon
Strawberry
Fresh Mint (from your garden!)
Jalapenos (optional)
Directions:
Cut your watermelon and strawberries into bite size pieces, then chop up some fresh mint, just enough to add some flavor. If you want a kick, finely chop a jalapeno. (I don’t add the jalapeno because we usually have kids eating it. )

See…isn’t that easy!? Make it, and enjoy it!

Another fun version of this that I’ve had is replacing the mint with basil and the jalapenos with a little Cayenne pepper and salt. It makes a plain ol’ fruit become a special savory appetizer/side. It’s amazing! 🙂
