Freezer Meals for when little Miss arrives!

When I was pregnant with E I decided to make some frozen meals for after the birth. It turned out great and as we settled in and the visitors slowed down, it was great to just pull something out of the freezer, stick in the crockpot or oven and have dinner done!

I wasn’t sure if I was going to do it again this time, but I figured with a toddler it will probably be more difficult to make dinner- so I found some recipes online and brought some that worked well last time, went shopping and spent the morning putting together our meals.

I got 9 meals in the freezer, with left-over ingredients in our pantry and freezer for another 5-7 or so. The first thing I did was start browning the beef- while that was cooking I started putting together the easiest bags that didn’t require anything cooked.

Crockpot Freezer Teriyaki Chicken
(adapted from Ring Around the Rosies) I haven’t made this before, but it looks great!

(below is what is needed for 1 bag)

1 cups (approx) of carrots
1/2 red onion, cut into large chunks
1 large can pineapple (undrained)
1 garlic cloves, minced
2 Chicken Breasts
1/2 cup teriyaki sauce

I made two bags for two meals. I cut 1 onion into chunks and minced two garlic cloves. In each bag I placed 2 frozen chicken breasts and remaining ingredients. I am sure you could use fresh chicken, but we only use frozen chicken and since it is going right back in the freezer it was easier this way, and cheaper. I also cut down on the garlic and onion because we aren’t huge fans of either in this house but we wanted a little of the flavor.Directions for Bags:
Add add’l 1/4 cup sauce to crock pot. Cook low 6-7 hours. Serve over hot rice

Sweet & Tangy Meatballs
(adapted from Ring Around the Rosies) I haven’t made this before, but it looks great and was SO easy to package!

(below is what is needed for 2 bags)

50 (approx) precooked frozen meatballs (I just bought a large bag from Costco)
18 oz grape jelly
2 cups BBQ sauceI mixed all of the ingredients together first in a large bowl for 2 meals, put 25 meatballs in each of the two freezer bag, and evenly distributed the remaining sauce between the two bags.

Directions for Bags:
Cook on low 2-4 hours. Serve over hot rice with a side of veggies

Crockpot Freezer Roast and Veggies
(I make this often, and froze a few with E; they turned out great- the trick to freezing the potatoes is to make sure they are completely covered in liquid while freezing)

(below is what is needed for 2 bags)
1 large chuck roast, cut in half (this feeds just hubby and I, if you have a large family you will want 1 whole roast in each bag.)
4 cups carrots
12 potatoes (can be small red or small russet, you could also cut up some large russet potatoes if that’s all you have.
4 cups beef broth
4 cups water
2 package onion soup mix

Place 6 potatoes on bottom of bag to insure they are covered in liquid. Place 1/2 roast, 2 cups carrots, 2 cups water, 2 cups beef broth and 1 package of onion soup mix in each bag (again, adjust for a larger family). Freeze with potatoes on bottom (I freeze upright with these).

Thaw before cooking. Put in crockpot, cook on low 6-8 hours (the bag says 4-6, but the longer you let it simmer the more tender the roast will be).

Crockpot Freezer Taco Soup 
I made and froze this with E and it turned out great! I made 3 batches this time, and just opened the cans and poured them straight in the freezer bags, put the seasoning and beef in last, Lots of cans for 3 batches!

(below is what is needed for 1 bag)
1 can corn
1 can pinto beans
1 can black beans
1 can kidney beans
1 can tomato sauce
1 can stewed tomatoes
2 cups (approx) cut carrots
2 cups cooked ground beef
3 Tbsp sugar
3 Tbsp taco seasoning
2 cups of beef broth

Pour all in a bag together, do not drain the canned items. Double bag- Freeze flat. When ready to cook, thaw, cook in crockpot for 4-6 hours.

Serve with tortilla chips, sour cream, lime, cilantro, etc.

I had a bit of ground beef left over, so I froze it in smaller batches to be able to use quickly. Things didn’t fit quite as nicely this time around, but everything was in bag so I was able to make it work.

I bought almost all of the ingredients for the items below, but couldn’t put them together because I ran out of room in the freezer, was missing a few ingredients, and/or realized I didn’t necessarily need to freeze them as meals.

Sloppy Joes– I have meat in freezer, cans of Manwich in the cupboard and hamburger buns in the freezer. It will be easy enough to heat up the meat and Manwich and toast a few buns.

Taco Pasta ( I have everything for this- but didn’t really want to freeze the cream cheese and sour cream, so I decided to leave it all separate, it is a pretty quick meal to cook)

1 pound Lean Ground Beef
8-12 ounces small Pasta shells ( I used Elbow)
1 small  Onion, chopped
1 clove Garlic, minced
1 (14 oz) can Diced Tomatoes, drained
4 Tablespoons Taco Seasoning
3 ounces Cream Cheese
1/2 cup Sour Cream
Salt and Pepper
DIRECTIONS:  Bring a large pot of water to a boil. Cook pasta according to package directions. Drain, reserving 1/2 cup of pasta water. Set aside.
Meanwhile, in a large skillet, cook ground beef and chopped onion over medium-high heat. Cook until beef is no longer pink. (Drain any grease) Then add minced garlic, cook and stir for 30 seconds. Stir in can of diced tomatoes and taco seasoning. Let simmer over medium heat for about 5 minutes.
Stir in cooked pasta, cream cheese, sour cream and 1/2 cup pasta water. Cook and stir until cream cheese has melted and sauce is well blended. Season with salt and pepper to taste. Simmer over low heat for another 5 minutes, or until sauce has reduced a bit. Serve!
Cream Cheese Chicken Chili (I was missing the black beans for this recipe, I had planned on putting it all together with the exception of the cream cheese and add the cream cheese about an hour before it’s done in the crockpot- once I get the black beans it will be easy enough to pull everything out of the pantry/freezer and throw it in the crockpot)
1 can black beans
1 can corn, undrained
1 can Rotel, undrained
1 package ranch dressing mix
1 tsp cumin
1 tsp chili powder
1 tsp onion powder
1 8 oz package light cream cheese
2 frozen chicken breastsDrain and rinse black beans. Place chicken at bottom of pot, then pour out whole can of corn (undrained), rotel, and black beans. Top with seasonings and ranch mix. Stir together. Place cream cheese on top. Cover with lid and cook on low for 6-8 hours. Stir cream cheese into chili. Use 2 forks to shred chicken. Stir together and serve.

Crockpot Salsa Chicken (I have everything I need, but no room in the freezer and I wasn’t sure about freezing everything- another easy meal to throw together when needed)
2 chicken breast
1 cup of salsa
1 can of cream of chicken or mushroom soup
1 cup sour cream
1 packet of taco seasoning
Put everything except the sour cream in crockpot for 6 hours, place sour cream in at the end and stir and shred chicken. We usually eat this over white rice.
So there it is! Hopefully we will be set for a few meals over the next few months. Tonight I am going to make this cheesy veggie chowder, and hopefully have enough left to freeze a small batch- but we”’ see!

    Stephanie, Awesome recipes! I’m NOT expecting another baby anytime soon, but will be returning to work after 2 weeks off for Christmas and have made up my mind I need to cook more often. The crockpot is this working mama’s BFF! Thanks for sharing. I will be sure to try many of the recipes you have posted! Lana
