Alternatively titled- Using my Lemons, however I somehow find this title more appropriate 🙂
Since hubby and I have been married, a little over six years, I have been thoroughly enjoying his Mom’s lemon cake served for special occassions! So when trying to come up with a fun dessert for our New Years Eve get together I wanted to try it out.

Also, for the last couple of years we have been growing this beautiful little Meyer Lemon tree in our backyard.

Every Winter these huge sweet lemon show up and I have YET to find something to use them for…. until now!

Enter, Mom-in-laws lemon cake- AKA Lemon Jello cake 🙂

It’s really easy, here it is:
1 box lemon cake mix
1 box lemon jell-o
3/4 vegetable oil
3/4 water
Mix all that for 3 minutes.
Add 4 eggs.
Beat for another 3 minutes, then back for 40 minutes on 350!
But then there’s the glaze. Enter- my lemons! 🙂

For the glaze use 1/2 cup of lemon juice (fresh if you have it) and 2 cups powdered sugar.

After taking cake out of oven, while still warm, poke LOTS of holes with a fork or toothpick, then spread glaze over top of cake continuing to spread glaze so it covers all of the holes (it will want to pool toward the corners and edges).

Let it sit and the glaze will harden up! Cut and serve- that simple 🙂
