I am a sucker for a good chicken salad sandwich. There used to be a restaurant in town that served the best sandwiches! Everytime we would go to this restarant I would get that sandwich with a crisp dill pickle on the side- it was great. But that restaurant eventually went out of business and I was stuck looking for another recipe to satisfy that craving, and then I finally found it!
I honestly don’t know where I found the beginning of my recipe. I usually have trouble following recipes- I am more of a “splash of that, dash of this” kind of girl, which is probably why I shouldn’t share my recipes… but I do 🙂
So here is my version of the chicken salad sandwich, adapted from countless recipes over the years.
First the chicken… I have found that the canned chicken works the best. I have used precooked rotisserie chicken from the grocery store and it was good, but added a rotisserie flavor to the sandwich. Again, good, but not what I was looking for. I have also cooked and shredded my own chicken and that is a close second. Really the canned chicken is just SO much easier, but it is more expensive as well. If you want the cheaper route, cook and shred your own chicken.
Next add a couple of tablespoons of mustard, mayonnaise (could use greek yogurt for a healthier version) and a splash of OJ- trust me on this, you can’t really taste the OJ, but it gives it a sweet tangy taste.
Add it some chopped celery.
Some sliced almonds.
And finally some halved grapes. I usually use the red grapes, because they are sweeter, but I only had the green.
Mix together, add more mayo, mustard, and/or OJ if needed. Add a dash of salt and pepper to taste, if needed.
And the best way to serve a chicken salad sandwich is on a buttery croissant!
