Yes, you heard it correctly.
I am craving sweets like CRAZY lately… and with the apparently-extraordinary amount of weight I have gained, I have been told to swear off of them (ya right). So yesterday when I was looking through my pantry and saw a can of pumpkin puree I knew exactly what to make to curb my sweets cravings.
So now you’re thinking “pumpkin?” YES! I was first introduced to these cupcake-muffins when I was trying to lose the newlywed 15 and they were so yummy. It’s been quite a while since I made them, so I am looking forward to this healthy chocolate snack.
And, as always, I can’t resist sharing with your lovelies! So, you ready?

Now I will tell you my mistake. For some reason I thought that they would hardly rise, not sure why I remember that, but since I did I filled the liners almost to the brim with mix… Note to self- they rise! You should probably fill the liners about 2/3 full. Also- the finished product will take on the shape of the batter… so if you are serving these, you might want to take a toothpick and smooth them out a little before baking.
They are not super sweet, they are actually really mild, but have the perfect touch of chocolate for that craving. If you are looking for something that tastes like pumpkin these are NOT them, they really hardly taste like pumpkin. If making 12 cupcakes, each has about 190 calories and 4 grams of fat (depending on which cake mix you use). If you are looking for a little something more add a dollop of cool-whip or better yet mix a little cocoa powder and cool-whip and use that as a topping! YUMMY!







Those sound great! You know what would make them even greater?? A cinnamon-y, cream cheesey frosting.
Of course, then they would not be healthy at all, and we would be back to square one. Still…
Those look so yummy! I agree they would be better with frosting 😉 I’m not a good influence when it comes to food! They couldn’t be any easier either.
Oh believe me the frosting would be fantastic… but I promise the cool-whip isn’t SO bad 🙂
