St. Patty’s Day Potluck- 7(ish) Layer Dip

The women in my office have a potluck at every chance possible! Seriously, it’s Friday? Potluck. Halloween? Potluck. Birthday? Potluck. Rainy Day? Potluck. So of course, St. Patty’s Day, POTLUCK!

I decided for this potluck to make one of my all-time favorite dishes, 7-layer dip. YUMMY! I am sure most of you know how or have made 7-layer dip before, but I wanted to show you mine 🙂

The usual 7-layer dip is
1) beans
2) sour cream
3) guacamole
4) tomatoes
5) cheese
6) green onions
7) olives

Mine is a little different, here is how it goes…

Layer 1 – beans- I use vegetarian refried beans, this way the dish is truly vegetarian. I didn’t this time, but I usually add a packet of taco seasoning to the beans… it is really tasty!

Layer 2- Sour Cream

Layer 3- Guacamole is the usual, however I thought it would be tasty to slice up some whole avocados. Plus, they were on sale 5 for $5, I only used 4 though.

Layer 4- This is where my 7-layer dip becomes only 6 layers. Instead of tomatoes and green onions I use a chunky salsa. It is SO tasty and it ads a little extra flavor to the mix (and it’s pretty too!)

Layer 5- Cheese, I used shredded Sargento Cheddar, also on sale 2 for $5, although it only took one bag.

And lastly, Layer 6- Olives

Serve with tortilla chips, fresh veggies, or anything else you’d like to dip 🙂

    Morning! Sounds like a fun place to work…any excuse for a celebration is good I think :-)! Speaking of which, what is your job? – Funny, I love St. Patty’s Day (all things Irish), but I totally forgot that it was today! Probably because we went to a St. Patrick’s Day Festival last Saturday, and then we’re having our Irish Dinner Party this coming Saturday. So we ARE celebrating, just not today. 🙂 Hope your Wednesday is a good one. I think I’ll go take the dog out for a walk before Bible Study this morning… Talk to you later!

    i love 7 layer dip. i think i could live on it for weeks.

    sadly, we are not doing anything today, as my boys are sick and my hubs is working late. such is life.
